Recipe: Chocolate-Oatmeal, No-Bake Cookies

  • 2 cups sugar
  • 1 stick unsalted butter
  • 1 cup cocoa powder
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup peanut butter, creamy or crunchy
  • 2 1/2 cups rolled oats, plus 1/2 cup more if necessary
  • Directions: In a medium saucepan, combine the sugar, butter, cocoa, milk, and vanilla. Bring to a slow boil, and simmer until the sugar has dissolved. Stir in the peanut butter. Remove from the heat. Stir in 2 1/2 c. oats. The mixture should be thick. Add the remaining 1/2 c. oats if necessary. Line a cookie sheet with parchment paper. Drop the mixture by the heaping tablespoonful onto the parchment. Allow the cookies to firm up at room temperature, about one hour.


Emilio is a rare breed of folks in Florida: he’s actually a native Floridian! It’s true. Emilio was born and raised in Florida and attended college in his hometown of St. Petersburg. After graduation, Emilio entered the real estate services industry for 10 years to work in various roles including sales, title insurance, appraisals, and mortgages. The idea of helping people to better themselves is what brought Emilio to Saint Leo’s door. He began his career as an enrollment counselor and felt that the skills learned in that position could transfer well into being a student advisor. Emilio enjoys the opportunity to build relationships with his students and help them through their experience at Saint Leo. His best piece of advice for his students: “Order your books early.”
